    These are the flautas the way our grandmother served them on the original Belmont Avenue menu. We roll them a little tighter, fry them a little longer, and plate them in a larger portion than the standard version — the kind of dish you order when you want the full classic. The tortillas crackle when you cut into them, and the shredded meat inside stays moist from a long, low simmer in a homemade chile-tomato base. They arrive bathed in a light pour of red salsa, with crema and guacamole on top to balance the heat.
