# Flautas Tradicionales

Our traditional-style flautas — extra crispy and generously filled.

These are the flautas the way our grandmother served them on the original Belmont Avenue menu. We roll them a little tighter, fry them a little longer, and plate them in a larger portion than the standard version — the kind of dish you order when you want the full classic. The tortillas crackle when you cut into them, and the shredded meat inside stays moist from a long, low simmer in a homemade chile-tomato base. They arrive bathed in a light pour of red salsa, with crema and guacamole on top to balance the heat.

## A little history

Tradicionales is more than a label — it means we're cooking the dish the way the family always has, without shortcuts. The recipe traces back to the first Toledo's location and is still followed by every cook in our kitchens across Fresno, Clovis, and Madera.
